Basic Hot Sauce (Tabasco-style)

Commercial versions of this hot sauce contain specially aged and prepared chilies so this version will be a little different from what you're used to.  However, through experimenting with different peppers and chilies - fresh or re-hydrated - you can create you're own signature fiery condiment. Check out the Scoville scale to decide how hot you want to go.

  • 1 pound chopped fresh or re-hydrated peppers or chilies

  • 2 cups distilled white vinegar

  • 2 teaspoons salt

Place the chilies and vinegar in a medium saucepan over medium heat. Stir in the salt; simmer for 5 minutes. Remove from heat, cool to room temperature and place in a blender. Puree until smooth then pour in a sealable glass container.

After steeping for 2 weeks in the refrigerator, strain the sauce.  Adjust the consistency by adding more vinegar to taste.

 

Sweet Memphis Mama Barbecue Sauce

This is a sweet sauce that's great on pork.  Reminiscent of classic Memphis barbecue, this sauce has just a subtle hint of heat.  If you like a warmer sauce than this cut the sugar and molasses, add more peppers and maybe mix in a bit of hot sauce.

  • 1 tablespoon butter
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 red chili seeded, chopped
  • 1 1/2 cups ketchup
  • 3 tablespoons molasses
  • 3 tablespoons brown sugar
  • 2 tablespoons prepared mustard
  • 1 tablespoon Worcestershire sauce
  • Juice of one lemon
  • 1 tablespoon liquid smoke
  • 1 teaspoon black pepper

Heat a large saucepan over medium heat.  Melt the butter being careful not to scorch it.  Add onions, garlic and chillies.  Cook, occasionally stirring until onions turn translucent.  Add the remaining ingredients.  Simmer for 10 minutes to desired thickness..

Use immediately or store in the refrigerator.

Classic Beef BBQ Sauce

  • 1 medium onion, finely chopped
  • 2 tablespoon oil
  • 4-6 cloves garlic, crushed
  • 3 cups ketchup
  • ½ cup brown sugar
  • 1 cup honey
  • 4 teaspoon chili powder
  • 6 tablespoon prepared mustard
  • 2-4 teaspoon cayenne pepper (optional)

Heat oil a large saucepan over medium heat.  Add onion and garlic. Cook, occasionally stirring until onions turn translucent.  Add the remaining ingredients.  Simmer for 10 minutes or to desired thickness.

Use immediately or store in the refrigerator.
